A Hog Roasties hog roast comprises of pig of 50 to 85 kilo which is prepared and dressed by local butchers. Dressing the pig includes slitting the skin to ensure that the crackling, when cooked, is full of flavour and in pristine condition ready for serving. The prepared hog is chilled to below 5 degrees.
When it arrives at our premises it is allowed to rise in temperature in readiness for cooking on the spit in our professional oven. Calculations are made to ensure that sufficient cooking time is allowed for the hog to be roasted in readiness for serving at the agreed time (A 60kg hog takes eight and a half hours to be cooked through thoroughly).
Cooking starts with high temperature in order to seal the meat. This is followed by a slow cook at a lower temperature to ensure that the hog remains succulent at the point of serving. Finally all heating is dispensed with and the hog is allowed to 'rest' prior to carving. As every good cook knows all meat carves better when it has been allowed to rest, this results in the meat from the hog being provided to the customer in uniform succulent slices rather than pulled chunks.
Hog Roasties' oven can also be converted to roast a wide variety of jointed meats, allowing us to offer you a number of alternative options should a hog not be your choice. We will tailor our provision to suit your specific requirements and every care is taken to ensure that your day is a complete success.
